    Spicy Vegan Scrambled Eggs

    Here’s a vegan breakfast idea for you! Are you a lover of tofu? If the answer is yes, then this is a recipe for you. In this recipe we will show you how to make a vegan scrambled egg using tofu as the vegan substitute for eggs. If you like your food hot and spice, adding in a drizzle of a Basil Infused Habanero Chilli Oil will start your day off the right way. Scrambled eggs aren’t just for breakfast though. You can enjoy this quick and easy recipe any time of the day!

    Scrambled Tofu with Eh-Co Chilli Oil

     

    Ingredients:

    • White onion
    • Garlic 
    • Extra-firm tofu (scrambled)
    • Nutritional yeast
    • Lemon
    • Salt
    • 1 teaspoon Eh-Co Habanero Chilli Oil

    Method:

    1. Chop tofu, onion and garlic
    2. Heat non-stick pan and add onion and garlic
    3. Cook for 5 minutes
    4. After 5 minutes, add the scrambled tofu, chilli oil and nutritional yeast
    5. Cook for 5-10 minutes
    6. Season with lemon and salt
    7. Serve immediately

    Eh-Co drizzled fried rice...yummm

    Let it never be said that our chilli oil was kept secret. Knock up a mean dish of fried rice and experience the excellence which Eh-Co brings. A distinctly hot and flavourful addition which takes nothing away from the actual flavours of the dish.

     Ingredients (serves 2)

    • 1 tbsp, vegetable oil
    • 2 tbsp Eh-Co Original (Habanero) flavour
    • 1 egg, beaten
    • 20g peas
    • 10-12 king prawns
    • 250g, long grain rice, cooked and cooled
    • 1/2 tsp salt, or to taste
    • 1 tbsp soya sauce, or to taste
    • White pepper, to taste
    • Spring onions, sliced

      Prep

     1) Prepare rice, see recipe   for boiled rice. Leave it to   cool before cooking as it   will be easier to cook with.

     2) Ensure you have taken   off the shell off your king   prawns and that they are   cooked. If you have bought them raw, take off its shell, boil some water in a pan and boil the king prawns for about two minutes until pink. 

    TIP: If the king prawns are grey in colour they are raw, if they are pink they have been pre-cooked. Also make sure you lay the prawn flat and make a cut down its side and take out its intestines. You will see this as a black line running down the side of the king prawn.

    Ready? Let's cook!

    1) Heat oil in a wok, on high heat until hot.

    2) Pour beaten egg into wok, stirring constantly. When egg has cooked a little into a scramble (about 30-45 seconds) add frozen peas, king prawns and stir for a minute.

    3) Add the chilli oil Eh-Co Original and stir well

    4) Next add in the boiled rice into the wok and fry for three minutes.

    5) Add salt and soy sauce to taste and fry for another three minutes. Serve.

    6) Garnish with spring onion and more chilli oil Eh-Co to suit.

    Homemade vegetable soup gets a face lift with our chili Oil Eh-Co

    Eh-Co took an ordinary looking vegetable soup to very new heights. . . . . . . . 

    The plan was to embark on a 2-week stint of low-carb/Keto intermittent fast, ahead of a show-stopping get together in Montreal.  

    So what's a girl to do when with 3 kids, a husband, home and full-time job, she has precious little spare time on her hands? Enter brainwave mode...it took the form of a heap of veggies, chopped and steamed together until tender. Yup...good isn't it :)

    Pulped in my fancy fancy blender, the end result didn't look like much. Enter brain wave mode 2 - drizzle a little of our legendary chilli oil, Eh-Co Original on it. Well tbh, that's more like a default mode. 

    Et voila!!! We have a gourmet vegetable soup. Seriously, you should try Eh-Co.  You would be glad you didn't pass up the opportunity.

    Eh-Co and the Keto Breakfast
      This recipe is so simple its       laughable. However, there is     nothing simple or laughable about the taste Eh-Co brings to it.

     Ingredients

     1 Large Bell Pepper (in a colour   of your choosing)

     2 medium eggs

     Pinch of salt

     1 tbsp chilli oil (Eh-Co Original)   - shop here

    2 tbsp rapeseed oil

    Prep

    Wash and slice the bell pepper in rings

    Beat the eggs, add salt and chilli oil (Eh-Co Original)

    Heat a frying pan and add rapeseed oil

    Put the pepper rings and add the egg mixture. 

    Cook for 3-5 mins

    Turn the rings over &  cook the other side for a further 3- 5 until done

    Serve hot and drizzle with some more chilli oil if needed

    It goes without saying that being an Ascot Royal Enclosure member, the CEO of Eh-Co (Etinde House Chilli Oil), Ndah Mbawa is bound to make a statement appearance at the Windsor races come June 2019.

    It was a blast last year! Eh-Co CEO thoroughly enjoyed ladies day with the Mister in tow and went back for more with my oldest girl for the closing event. See Royal Ascot 2018 pics below. So, how to match or beat those looks is the question?
